Ingredients
  

  • 1 quart of your favorite ice cream
  • 1 cup unsalted butter, melted
  • 1.1/2 cups granulated sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 tbsp salt
  • 1/2 baking powder

Instructions
 

  • Preheat the oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper.
  • Make the brownie batter: In a large mixing bowl, combine the melted butter, sugar, eggs, and vanilla extract. Beat until smooth. Sift the flour, cocoa powder, salt, and baking powder into the wet ingredients and stir until fully combined.
  • Bake the brownies: Pour the batter into the prepared pan and spread it out evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out with a few crumbs attached. Let the brownies cool completely in the pan.
  • Assemble the sandwiches: Once the brownies have cooled, remove them from the pan and cut them into squares. Let the ice cream soften slightly, then scoop a generous amount onto one brownie square. Top with another brownie square to form a sandwich.
  • Freeze: Wrap each brownie ice cream sandwich in plastic wrap or wax paper and freeze for at least 1-2 hours to allow the ice cream to firm up.

Notes

  • Let the brownies cool completely before assembling. If the brownies are too warm, they’ll melt the ice cream.
  • Choose a firm ice cream that’s easy to scoop. If the ice cream is too soft, it will be harder to form neat sandwiches.
  • Try using different ice cream flavors or even add sprinkles or chocolate chips for extra texture and flavor.
