Ingredients
  

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 1 pound pasta
  • Fresh parsley, chopped (for garnish)

Instructions
 

  • Cook the pasta: Begin by boiling a large pot of salted water. Add the pasta and cook according to the package instructions, until al dente. Drain and set aside.
  • Prepare the chicken: Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat. Add the chicken and cook for about 6-7 minutes on each side until golden brown and fully cooked. Remove the chicken from the skillet and set aside to rest. Once cooled, slice it thinly.
  • Make the creamy sauce: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer and cook for 5 minutes until it thickens slightly.
  • Add the cheese: Stir in the mozzarella cheese and Parmesan cheese, allowing them to melt into the sauce. Add the Italian seasoning and red pepper flakes (if using) for extra flavor. Taste and adjust seasoning with salt and pepper.
  • Combine: Add the cooked pasta to the sauce, tossing to coat it evenly. Add the sliced chicken on top and gently stir to combine everything.
  • Serve: Garnish with fresh parsley and serve hot.

Notes

When cooking the chicken, be sure not to overcook it. It should be juicy and tender. If your sauce becomes too thick, simply add a little more chicken broth or milk to thin it out. The mozzarella will continue to melt, so be careful not to add too much liquid all at once.
