Ingredients
  

  • 2 ears of corn, husked
  • 1 red bell pepper, finely chopped
  • 1 small red onion, finely chopped
  • 1 jalapeño pepper, deseeded and finely chopped
  • 1 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions
 

  • Grill the Corn: Heat the grill to medium-high. Place the corn on the grill and cook for about 8-10 minutes, turning every 2-3 minutes until the corn is charred on all sides. Once done, remove from the grill and allow it to cool.
  • Prep the Veggies: While the corn is cooling, chop the red bell pepper, onion, jalapeño, and cilantro.
  • Cut the Corn Off the Cob: Once the corn has cooled, carefully cut the kernels off the cob using a sharp knife.
  • Combine Ingredients: In a large mixing bowl, combine the grilled corn, red bell pepper, onion, jalapeño, and cilantro.
  • Season: Add the olive oil, lime juice, ground cumin, salt, and pepper. Toss everything together until well combined.
  • Serve: Let the salsa sit for a few minutes to allow the flavors to meld. Serve with chips, tacos, or as a side dish!

Notes

  • Feel free to adjust the heat level by adding more or less jalapeño.
  • The lime juice and cumin provide a unique zing, but you can add chili powder or smoked paprika for a different twist.
  • This salsa can be made a few hours ahead of time to allow the flavors to fully develop.
  • Leftover salsa can be stored in an airtight container in the refrigerator for up to 2-3 days.
