Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups breadcrumbs (preferably Italian-style)
  • 1 cup grated Parmesan cheese
  • 1 tbsp garlic powder
  • 1 tbsp dried oregano
  • 1 tbsp dried basil
  • Salt and pepper to taste
  • Olive oil or vegetable oil for frying
  • 1 cup heavy cream (for the Alfredo sauce)
  • 2 tbsp butter
  • 1 clove garlic, minced
  • 1 cup grated mozzarella cheese
  • 1/2 cup grated Parmesan cheese (for the sauce)
  • Fresh parsley (for garnish)

Instructions
 

  • Prepare the Chicken: Season both sides of the chicken breasts with salt, pepper, garlic powder, oregano, and basil.
  • Bread the Chicken: In one shallow bowl, whisk the eggs. In another shallow bowl, combine the flour, breadcrumbs, and Parmesan cheese. Dip each chicken breast first into the egg mixture, then coat it in the breadcrumb mixture.
  • Cook the Chicken: Heat oil in a skillet over medium heat. Fry the breaded chicken breasts until golden brown and cooked through (about 6-7 minutes per side). Make sure the internal temperature reaches 165°F. Set the chicken aside.
  • Make the Alfredo Sauce: In the same skillet, melt butter over medium heat. Add minced garlic and cook until fragrant (about 1 minute). Add the heavy cream and bring it to a simmer. Stir in the mozzarella and Parmesan cheese until smooth. Season with salt and pepper to taste.
  • Assemble the Dish: Place the fried chicken on plates. Pour the creamy Alfredo sauce over the top. Garnish with fresh parsley and extra Parmesan cheese.

Notes

Make sure the oil is hot enough before frying the chicken to ensure a crispy, golden crust. If the oil is too cold, the breadcrumbs will absorb excess oil, making the chicken greasy instead of crispy. Always check the internal temperature of the chicken to make sure it's fully cooked.
