Mini Cherry Pies Recipe

Mini cherry pies are simply smaller versions of traditionalcherry pies. They feature a filling made from fresh or canned cherries, sugar,and spices, all baked inside a small, individual pie crust.

Ingredients
  

  • 1 can (15 oz) of cherry pie filling
  • 1 package (14 oz) of refrigerated pie crusts
  • 2 tbsp of granulated sugar
  • 1 tbsp of cornstarch
  • 1 tbsp of lemon juice
  • 1 tbsp of butter
  • 1 egg (for egg wash)
  • A pinch of salt

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Prepare the dough by rolling out the pie crusts on a floured surface. Use a round cutter or a glass to cut out circles, large enough to fit your muffin tin or pie mold.
  • Prepare the filling: If you're using fresh cherries, combine them in a bowl with sugar, cornstarch, lemon juice, and a pinch of salt. Stir until the mixture thickens. If using canned pie filling, you can skip this step.
  • Assemble the pies: Place each dough circle in the muffin tin, pressing down gently to fit. Spoon the cherry filling into each crust, filling them almost to the top.
  • Add butter: Dot the filling with small pieces of butter.
  • Top with another dough circle: Place another dough circle over the filling. Use a fork to crimp the edges of the pies together.
  • Make the egg wash: Beat the egg and brush it over the top of each mini pie to give it a golden finish.
  • Bake: Place the pies in the oven and bake for 18-20 minutes, or until the crust is golden and the filling is bubbling.
  • Cool: Let the mini pies cool for 10 minutes before serving.

Notes

  • Be sure to vent the tops of the pies by cutting small slits with a knife. This will allow steam to escape and prevent the crust from bursting.
  • If you want an extra golden and shiny crust, brush the top with egg wash right before baking.
