Ingredients
  

  • 4 ripe peaches (diced)
  • 1 French baguette or any crusty bread of your choice
  • 1 tbsp balsamic vinegar
  • 2 tbsp honey
  • 1/4 cup crumbled goat cheese
  • 1/4 cup fresh basil leaves (chopped)
  • 1 tbsp olive oil
  • Salt and pepper (to taste)

Instructions
 

  • Preheat your oven to 375°F (190°C) or heat a toaster.
  • Slice the baguette into 1/2-inch thick pieces. Brush both sides of each slice lightly with olive oil.
  • Toast the bread in the oven for 5-7 minutes or until it’s golden brown and crispy.
  • While the bread is toasting, prepare the topping: dice the peaches, chop the basil, and mix them in a small bowl. Add balsamic vinegar, honey, salt, and pepper to taste.
  • Assemble the bruschetta: once the bread is toasted, spread a small amount of goat cheese on each slice.
  • Top the bread with the peach mixture, ensuring even distribution.
  • Optionally, drizzle a little more balsamic vinegar over the top for an extra tang.
  • Serve immediately and enjoy the sweet and savory burst of flavors!

Notes

When selecting peaches, try to pick ones that are ripe but firm. Overripe peaches may turn mushy and could affect the texture of the bruschetta. For the perfect balance of flavors, let the balsamic vinegar and honey sit with the peaches for a few minutes before assembling. This will enhance the sweetness and the depth of the flavor.
