  • Prepare the Ingredients: Grate the sharp cheddar cheese into a large mixing bowl. Drain and chop the pimentos into small pieces.
  • Mix It Up: Add the mayonnaise, Dijon mustard (if using), garlic powder, cayenne pepper (if using), and salt and pepper to the bowl with the cheese. Stir until all ingredients are well combined.
  • Taste and Adjust: Taste your pimento cheese and adjust the seasoning if necessary. You can add more salt, pepper, or cayenne for extra heat, depending on your preference.
  • Chill: For the best flavor, cover the bowl and let the pimento cheese chill in the fridge for at least an hour before serving. This helps the flavors to meld together.
  • Serve: Once chilled, your pimento cheese is ready to be served with crackers, on a sandwich, or as a topping for burgers!

Notes

When making pimento cheese, it's important to use freshly grated cheese rather than pre-shredded cheese. Pre-shredded cheese often contains anti-caking agents that can affect the texture of your spread. If you prefer a smoother texture, you can also blend the ingredients using a food processor.
