Ingredients
  

  • 1 pound (450g) shrimp.
  • 8 ounces (225g) spaghetti or linguine.
  • 4 tbsp unsalted butter
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • Juice of 1 lemon
  • Zest of 1 lemon
  • Salt and black pepper, to taste
  • 1/4 cup fresh parsley, chopped

Instructions
 

  • Cook the pasta: In a large pot of salted water, cook the pasta according to the package directions until al dente. Drain and set aside.
  • Cook the shrimp: In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, until they turn pink and are cooked through. Remove the shrimp from the skillet and set them aside.
  • Make the sauce: In the same skillet, add the remaining butter. Once melted, add the minced garlic and crushed red pepper flakes. Sauté for 1 minute, or until fragrant.
  • Deglaze the pan: Pour in the white wine (or chicken broth) and let it simmer for 2-3 minutes, scraping up any bits stuck to the bottom of the pan.
  • Combine the pasta and shrimp: Add the cooked pasta to the skillet, tossing it to coat in the garlic-butter sauce. Squeeze in the lemon juice and sprinkle the zest over the pasta. Add the shrimp back to the skillet and toss to combine.
  • Garnish and serve: Season with salt and black pepper to taste. Sprinkle with chopped parsley and grated Parmesan cheese, if desired. Serve immediately.

Notes

For the best shrimp scampi pasta, ensure the shrimp are not overcooked. Overcooked shrimp can turn rubbery, so remove them from the skillet as soon as they turn pink. Additionally, using freshly squeezed lemon juice enhances the flavor, so avoid bottled lemon juice for the best results.
