Ingredients
  

  • 1 lb (450g) shrimp
  • 8 oz (225g) pasta
  • 2 tbsp olive oil
  • 3 cloves garlic
  • 1 cup heavy cream
  • 1 cup chicken broth
  • ½ cup sun-dried tomatoes
  • 2 cups fresh spinach
  • 1 tbsp Italian seasoning
  • ½ cup grated Parmesan cheese
  • Salt and pepper

Instructions
 

  • Cook the pasta: Boil a large pot of salted water and cook the pasta according to the package directions. Drain and set aside.
  • Cook the shrimp: In a large skillet, heat olive oil over medium heat. Add shrimp, cooking for about 2-3 minutes on each side until they turn pink and are cooked through. Remove the shrimp and set them aside.
  • Make the sauce: In the same skillet, add minced garlic and cook for about 1 minute until fragrant. Add the chicken broth and bring to a simmer.
  • Add cream and seasonings: Stir in the heavy cream, sun-dried tomatoes, spinach, and Italian seasoning. Let it simmer for 5 minutes until the sauce thickens.
  • Combine pasta and shrimp: Add the cooked pasta and shrimp to the skillet, stirring to coat everything evenly in the sauce. Mix in the Parmesan cheese and adjust the seasoning with salt and pepper.
  • Serve: Plate the pasta and garnish with additional Parmesan cheese and fresh herbs if desired.
